Ingredients
  

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1 egg beaten
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup divided

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a loaf pan.
  • In a mixing bowl, combine ground chicken, breadcrumbs, egg, milk, salt, black pepper, and half of the ketchup. Mix well.
  • Transfer mixture to the loaf pan and shape into a loaf.
  • Spread the remaining ketchup over the top of the loaf.
  • Bake for 45 minutes or until the internal temperature reaches 165°F (75°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For extra flavor, add finely chopped onions, garlic, or herbs to the mixture.
