Ingredients
  

For the marinade
  • 1/4 cup Olive oil Essential for keeping the chicken moist.
  • 1/4 cup Soy sauce Consider using low-sodium for a lighter option.
  • 2 tablespoons Honey Can substitute with maple syrup.
  • 3 cloves Garlic, minced Fresh garlic recommended for bold flavor.
  • 1 tablespoon Lemon juice Fresh is best, but bottled works in a hurry.
  • 1 teaspoon Paprika Smoked paprika gives a deeper flavor.
  • to taste Salt Essential for seasoning.
  • to taste Black pepper Essential for seasoning.
For the skewers
  • 1.5 pounds Chicken breasts or thighs Chicken thighs are juicier; feel free to mix.

Method
 

Preparation
  1. In a bowl, combine olive oil, soy sauce, honey, minced garlic, lemon juice, paprika, salt, and pepper.
  2. Cut chicken into bite-sized pieces and add to the marinade. Toss to coat and let sit for at least 30 minutes in the refrigerator.
Grilling
  1. Preheat your grill to medium-high.
  2. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  3. Thread the marinated chicken onto the skewers.
  4. Place skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through.
Serving
  1. Remove from the grill and let sit for a minute or two. Serve hot with your favorite sides.

Notes

Marinate longer for more flavor and avoid overcrowding the skewers for even cooking. Use a meat thermometer to ensure chicken reaches 165°F. Experiment with adding vegetables to skewers.
