  • 1 ball pizza dough 14-16 oz, store-bought or homemade
  • 1 tbsp olive oil plus more for drizzling
  • 8 oz Italian sausage mild or hot, casings removed
  • 1/2 cup tomato sauce good quality
  • 1 cup mozzarella cheese shredded
  • 4 oz feta cheese crumbled
  • 1/4 red onion thinly sliced
  • 2 tbsp fresh basil chopped, for garnish
For the Hot Honey
  • 1/4 cup honey
  • 1 tsp red pepper flakes or to taste
  • 1/2 tsp apple cider vinegar optional, for balance

Method
 

Prepare the Sausage
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain any excess grease and set aside.
Prepare the Pizza
  1. If using a pizza stone, place it in the oven and preheat to 475°F (245°C) for at least 30 minutes. If using a baking sheet, preheat the oven to 450°F (230°C).
  2. On a lightly floured surface, stretch or roll out the pizza dough into a 12-14 inch circle.
  3. Carefully transfer the dough to a piece of parchment paper or a cornmeal-dusted pizza peel. Spread the tomato sauce evenly over the dough, leaving a 1-inch border.
  4. Sprinkle the shredded mozzarella cheese over the sauce. Evenly distribute the cooked Italian sausage, crumbled feta cheese, and thinly sliced red onion over the mozzarella.
  5. Slide the pizza (with parchment paper, if using) onto the preheated pizza stone or baking sheet. Bake for 12-18 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.
Make the Hot Honey
  1. While the pizza bakes, combine honey, red pepper flakes, and apple cider vinegar (if using) in a small saucepan. Heat gently over low heat for 2-3 minutes, stirring occasionally, until warmed and well combined. Alternatively, microwave for 30-60 seconds.
Serve
  1. Remove the pizza from the oven. Drizzle generously with the hot honey. Garnish with fresh chopped basil. Slice and serve hot.

Notes

For an extra crispy crust, you can brush the edges of the dough with a little olive oil before baking. If you prefer less spice, reduce the amount of red pepper flakes in the hot honey. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or an air fryer.
