Garlic Parmesan Chicken Meatloaf

Ingredients
  

For the Meatloaf
  • 2 lbs ground chicken 93/7 lean
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs beaten
  • 1/3 cup milk whole milk
  • 1 medium yellow onion finely diced
  • 6 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
For the Topping
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter melted
  • 1 tsp garlic powder

Method
 

Preparation
  1. Preheat your air fryer to 350°F (175°C). Lightly grease a loaf pan that fits in your air fryer basket.
  2. In a large mixing bowl, combine the ground chicken, panko breadcrumbs, 1/2 cup Parmesan cheese, beaten eggs, milk, diced onion, minced garlic, parsley, oregano, salt, and pepper.
  3. Using your hands or a large spoon, gently mix all ingredients until just combined. Don't overmix as this can make the meatloaf tough.
Cooking
  1. Transfer the mixture to the prepared loaf pan and shape into an even loaf. Press gently to remove air pockets.
  2. Place the loaf pan in the air fryer basket and cook for 35 minutes at 350°F.
  3. Meanwhile, prepare the topping by mixing the remaining 1/4 cup Parmesan cheese, melted butter, and garlic powder in a small bowl.
  4. After 35 minutes, remove the meatloaf and spread the Parmesan topping evenly over the surface. Return to air fryer for an additional 10 minutes until internal temperature reaches 165°F (74°C).
  5. Let the meatloaf rest for 5 minutes before slicing. Serve hot with your favorite sides.

Notes

For best results, use a meat thermometer to ensure the internal temperature reaches 165°F. This meatloaf can be stored in the refrigerator for up to 3 days and reheats well in the air fryer at 300°F for 3-4 minutes. You can also make this in a conventional oven at 375°F for 50-55 minutes if you don't have an air fryer.
