Preparation
- Preheat your air fryer to 350°F (175°C). Lightly grease a loaf pan that fits in your air fryer basket.
- In a large mixing bowl, combine the ground chicken, panko breadcrumbs, 1/2 cup Parmesan cheese, beaten eggs, milk, diced onion, minced garlic, parsley, oregano, salt, and pepper.
- Using your hands or a large spoon, gently mix all ingredients until just combined. Don't overmix as this can make the meatloaf tough.
Cooking
- Transfer the mixture to the prepared loaf pan and shape into an even loaf. Press gently to remove air pockets.
- Place the loaf pan in the air fryer basket and cook for 35 minutes at 350°F.
- Meanwhile, prepare the topping by mixing the remaining 1/4 cup Parmesan cheese, melted butter, and garlic powder in a small bowl.
- After 35 minutes, remove the meatloaf and spread the Parmesan topping evenly over the surface. Return to air fryer for an additional 10 minutes until internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 5 minutes before slicing. Serve hot with your favorite sides.
Notes
For best results, use a meat thermometer to ensure the internal temperature reaches 165°F. This meatloaf can be stored in the refrigerator for up to 3 days and reheats well in the air fryer at 300°F for 3-4 minutes. You can also make this in a conventional oven at 375°F for 50-55 minutes if you don't have an air fryer.
