  • 8 oz Dark chocolate You can substitute with semi-sweet chocolate if you prefer.
  • 1/2 cup Unsalted butter Use margarine if you’re out of butter.
  • 1 cup Granulated sugar Coconut sugar can be used as a healthier alternative.
  • 1/2 cup Brown sugar Infuses a lovely caramel flavor; don’t skip this.
  • 3 Eggs Can substitute with flax eggs for a vegan option.
  • 1 cup All-purpose flour Gluten-free flour can be used as a substitute.
  • 1/2 cup Cocoa powder Dutch-processed cocoa makes for a richer taste.
  • 1/2 tsp Baking powder Just a pinch is needed since we like them dense.
  • 1/4 tsp Salt Sea salt adds an extra pop of flavor.
  • 1 tsp Vanilla extract Real vanilla is best, but vanilla essence can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the dark chocolate and unsalted butter. Melt them together using a microwave in 30-second intervals, stirring until smooth.
  3. Add granulated sugar and brown sugar to the melted chocolate. Stir until well combined.
  4. Beat in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract until creamy.
  5. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold until just combined, avoiding overmixing.
Baking
  1. Pour the batter into a greased or parchment-lined baking dish and spread it evenly.
  2. Bake for 20-25 minutes, or until a toothpick inserted comes out with a few moist crumbs.
Cooling and Serving
  1. Let the brownies cool in the pan for at least 10 minutes before cutting into squares.
  2. Serve warm with vanilla ice cream or drizzle with chocolate sauce, if desired.

Notes

For extra fudginess, refrigerate the brownies for several hours. They can be stored in an airtight container for up to a week in the fridge or frozen for up to 3 months.
