Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted Allow to cool slightly for richer flavor.
  • 1 cup milk
  • 2 large eggs Can substitute with flaxseed meal or applesauce for egg-free version.
  • 1 teaspoon vanilla extract
Mix-ins and Toppings
  • 1 cup Fruity Pebbles cereal Plus 1/2 cup for topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in 1 cup of Fruity Pebbles.
  5. Pour the batter into the prepared loaf pan and sprinkle the remaining Fruity Pebbles on top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze for up to three months. Ensure to wrap it tightly before freezing.
