Prepare the Dressing
- In a small mixing bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper until well combined. Set aside.
Prepare Ingredients for Skewers
- Ensure all vegetables are rinsed and thoroughly dried. Cut the cucumber, feta cheese, red onion, and green bell pepper into bite-sized pieces, roughly 3/4-inch to 1-inch, suitable for skewering.
Assemble the Skewers
- Carefully thread the ingredients onto the wooden skewers, alternating for color and texture. A suggested order is: cherry tomato, cucumber, feta cube, Kalamata olive, red onion piece, green bell pepper, and repeat. Aim for 4-5 pieces per skewer, ensuring a variety of ingredients.
- Continue until all ingredients are used, aiming for approximately 16 skewers.
Dress and Serve
- Arrange the assembled skewers on a serving platter. Drizzle the prepared Greek dressing generously over the skewers, ensuring each piece gets a coating. You can also serve the dressing on the side for dipping.
- Serve immediately, or chill for a short period before serving for an even more refreshing appetizer. Enjoy!
Notes
For an extra touch, you can briefly soak wooden skewers in water for 15-20 minutes before use, especially if you plan to grill them later (though this recipe is raw). These skewers are best enjoyed fresh but can be prepared a few hours in advance and kept refrigerated. Drizzle with dressing just before serving to prevent sogginess. Add a fresh mint leaf for a pop of extra freshness!
