- Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- In a large skillet, melt the butter over medium heat. Add sliced onions and cook slowly for 12–15 minutes until caramelized.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the cooked chicken, orzo pasta, chicken broth, heavy cream, thyme, salt, and pepper.
- Pour the mixture into the prepared baking dish and sprinkle Gruyère and mozzarella cheese evenly on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 10–15 minutes until the cheese is melted and golden.
- Let the casserole rest for 5 minutes before serving.
Notes
For extra flavor, sprinkle crispy fried onions or toasted breadcrumbs on top before the final bake. Rotisserie chicken works great for this recipe.
