Ingredients

  • 1/2 cup unsalted butter cut into pieces
  • 6 oz dark chocolate chopped
  • 3/4 cup granulated sugar
  • 3 large eggs room temperature
  • 1/4 cup unsweetened cocoa powder sifted
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Equipment

  • 8-inch round cake pan
  • Mixing bowls
  • Hand whisk or electric mixer

Method

  1. Preheat the oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Melt the butter and chocolate together in a heatproof bowl over a double boiler or in the microwave, stirring until smooth.
  3. Whisk in the sugar, followed by the eggs, one at a time, mixing well after each addition.
  4. Gently fold in the cocoa powder, vanilla extract, and salt until just combined.
  5. Pour the batter into the prepared cake pan and bake for 25 minutes, or until the center is just set.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Dust with powdered sugar or serve with whipped cream, if desired.

Notes

This cake is rich and fudgy on its own but pairs beautifully with fresh berries or a scoop of vanilla ice cream.
