Prepare the Puff Pastry
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Gently unroll the thawed puff pastry sheet onto the prepared baking sheet. If desired, lightly score a 1/2-inch border around the edges of the pastry (do not cut all the way through) to create a defined crust.
- Brush the scored border with the whisked egg wash. This will help create a golden, flaky crust.
Assemble the Pizza
- Spread the pizza sauce evenly over the puff pastry, staying within the scored border if you made one.
- Sprinkle 1 cup of mozzarella cheese over the sauce.
- Arrange the pepperoni, bell pepper, and red onion (if using) evenly over the cheese.
- Sprinkle with the remaining 1/2 cup of mozzarella cheese and the grated Parmesan cheese.
- Season with dried oregano and red pepper flakes (if desired).
Bake and Serve
- Bake for 18-22 minutes, or until the puff pastry is golden brown, puffed up, and the cheese is melted and bubbly.
- Carefully remove the pizza from the oven. Let it cool on the baking sheet for 5 minutes before transferring to a cutting board.
- Slice into desired pieces and serve immediately.
