Ingredients
  

For the Carrots
  • 1.5 lbs Carrots peeled and cut into 1/2-inch thick pieces on the bias or into sticks
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
For the Glaze
  • 2 tbsp Fish Sauce
  • 2 tbsp Honey
  • 1 tbsp Lime Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 tsp Toasted Sesame Oil optional, for extra depth
  • 1/4 tsp Red Pepper Flakes optional, for a hint of heat
For Garnish
  • 2 tbsp Fresh Cilantro or Parsley chopped

Method
 

Prepare Carrots for Roasting
  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup. In a large mixing bowl, toss the peeled and cut carrots with olive oil, salt, and black pepper until evenly coated.
Roast Carrots
  1. Spread the seasoned carrots in a single layer on the prepared baking sheet. Roast for 15-20 minutes, or until tender-crisp and slightly caramelized. Flip them halfway through cooking for even browning.
Prepare the Glaze
  1. While the carrots are roasting, in a small bowl, whisk together the fish sauce, honey, fresh lime juice, minced garlic, optional toasted sesame oil, and optional red pepper flakes until well combined.
Glaze and Serve
  1. Once the carrots are tender, remove them from the oven. Pour the prepared glaze over the hot carrots and toss gently to coat them evenly.
  2. Transfer the glazed carrots to a serving dish. Garnish with fresh chopped cilantro or parsley before serving hot.

Notes

For a faster option, you can air fry the carrots at 380°F (195°C) for 12-15 minutes, shaking the basket halfway, then toss with the glaze. Adjust lime juice to your taste for more tang. This recipe is best served immediately.
