Prepare for Baking
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper to prevent sticking and for easy cleanup.
Mix the Dough
- In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and all-purpose flour. Use an electric mixer on medium speed, or a sturdy spoon, to mix until well combined and a thick, fudgy dough forms. Be careful not to overmix.
- If using, fold in the chocolate chips until they are evenly distributed throughout the dough.
Form and Bake Cookies
- Using a small cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. The dough will be sticky, which is normal for brownie cookies.
- Bake for 8-10 minutes, or until the edges are set and the centers still look slightly soft and fudgy. Do not overbake, as they will continue to set as they cool.
Cool and Serve
- Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before carefully transferring them to a wire cooling rack to cool completely. This helps them firm up without breaking.
- Serve warm or at room temperature and enjoy your Easy to Make Brownie Mix Cookies!
Notes
For an extra touch, sprinkle a pinch of sea salt on top of the cookies immediately after they come out of the oven. These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3-4 days. You can also mix in other additions like chopped nuts, toffee bits, or white chocolate chips for different flavor profiles.
