For the Cobbler
  • 4 cups Fresh strawberries Ripe and sweet strawberries are ideal; can substitute with thawed frozen fruit.
  • 1 cup Sugar Adjust based on taste; honey can be used as an alternative.
  • 1 cup All-purpose flour Gluten-free blend can be used if necessary.
  • 2 teaspoons Baking powder Helps the topping rise.
  • 1 cup Milk Dairy or non-dairy milk both work well.
  • 1/2 cup Butter Melted; vegetable oil can be used in a pinch.
  • 1 teaspoon Vanilla extract Optional but recommended for added flavor.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the fresh strawberries with sugar. Toss them gently and let them sit for about 10 minutes to release their juices.
  3. In another bowl, mix together the flour, baking powder, and a pinch of salt.
  4. Make a well in the center of the dry ingredients and add milk, melted butter, and vanilla extract. Stir until just combined—be careful not to overmix!
  5. Pour the strawberry mixture into a greased baking dish, evenly distributing the berries.
  6. Dollop spoonfuls of the batter over the strawberries—don’t worry about covering every inch!
Baking
  1. Bake in the preheated oven for around 30-35 minutes or until the topping is golden brown and a toothpick inserted comes out clean.
  2. Let it cool for a few minutes before serving.

Notes

Serve warm for the best experience, ideally with vanilla ice cream or whipped cream. For extra flavor, add cinnamon to the dry ingredients and consider using different fruits seasonally.
