Ingredients
  

For the Bread
  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup Fruity Pebbles cereal plus 1/4 cup for topping
  • 2 large eggs room temperature
  • 1/2 cup milk whole milk recommended, room temperature
  • 1/2 cup vegetable oil or other neutral oil
  • 1 tsp vanilla extract
For the Glaze (Optional)
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/4 tsp vanilla extract
  • 1/4 cup Fruity Pebbles cereal for garnish

Method
 

Prepare for Baking
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper leaving an overhang on the long sides for easy removal.
Mix Dry Ingredients
  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Make sure there are no lumps.
Mix Wet Ingredients
  1. In a separate medium mixing bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
Combine and Fold
  1. Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula until just combined. Be careful not to overmix; a few small lumps are okay. Overmixing can lead to a tough bread.
  2. Gently fold in 1 cup of Fruity Pebbles cereal into the batter.
Bake the Loaf
  1. Pour the batter evenly into the prepared loaf pan. Sprinkle the remaining 1/4 cup of Fruity Pebbles cereal over the top of the batter.
  2. Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. If the top starts to brown too quickly, you can tent it loosely with aluminum foil.
  3. Once baked, remove the pan from the oven and let it cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely.
Prepare Glaze (Optional)
  1. While the bread cools, whisk together the powdered sugar, 2 tablespoons of milk, and 1/4 teaspoon vanilla extract in a small bowl until smooth. Add more milk, 1 teaspoon at a time, if a thinner consistency is desired.
Finish and Serve
  1. Once the bread is completely cool, drizzle the glaze over the top. Immediately sprinkle with the additional 1/4 cup of Fruity Pebbles cereal for garnish.

For best results, ensure your eggs and milk are at room temperature. This helps them incorporate better into the batter, leading to a smoother texture.
