Prepare the Cookie Crust
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round pizza pan or line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Do not overmix.
- Press the cookie dough evenly onto the prepared pizza pan or baking sheet, forming a 9-inch circle. You can use your hands or a rubber spatula.
- Bake for 12-15 minutes, or until the edges are lightly golden brown and the center is set. Do not overbake. Let the cookie crust cool completely on the pan before attempting to remove or frost.
Make the Sweet Cream Cheese Frosting
- While the crust cools, prepare the frosting. In a clean large mixing bowl, beat the softened cream cheese and softened butter with an electric mixer until smooth and creamy, with no lumps (about 2-3 minutes).
- Add the vanilla extract and beat to combine.
- Gradually add the sifted powdered sugar, 1 cup at a time, beating on low speed until incorporated, then increasing to medium-high speed until the frosting is light, fluffy, and smooth. Add more powdered sugar for a thicker frosting, if desired.
Assemble the Fruit Pizza
- Once the cookie crust is completely cool, spread the sweet cream cheese frosting evenly over the top, leaving a small border around the edge.
- Arrange the fresh fruit decoratively over the frosting. Be creative with your pattern and color combinations!
- Optional glaze: For a glossy finish and to help preserve the fruit, gently warm 2 tablespoons of apricot jam or clear jelly (you can microwave it for 10-15 seconds until runny). Using a pastry brush, lightly brush the melted jam over the fruit.
- Chill the fruit pizza in the refrigerator for at least 30 minutes before serving. This helps the frosting set and keeps the fruit fresh.
- Slice and serve chilled. Enjoy!
Notes
This fruit pizza is best served the day it's made, but leftovers can be stored covered in the refrigerator for up to 2-3 days. For a lighter version, you can substitute a store-bought sugar cookie dough roll for the homemade crust. Feel free to customize the fruit topping with your favorite seasonal fruits like raspberries, sliced peaches, or mango. Ensure all fruit is thoroughly washed and dried before topping.
