Ingredients
  

For the Skewers
  • 8 oz Cheddar cheese cut into 3/4-inch cubes
  • 8 oz Colby Jack cheese cut into 3/4-inch cubes
  • 1 cup Red grapes washed and destemmed
  • 1 cup Green grapes washed and destemmed
  • 1 cup Strawberries washed, hulled, and halved or quartered if large
  • 1/2 small Cantaloupe peeled, deseeded, and cut into 3/4-inch cubes
  • 1/2 cup Blueberries washed
  • 2 Kiwi peeled, sliced into rounds, then halved
  • 12-16 Small wooden or bamboo skewers 4-6 inches long
Optional Garnish
  • 1 tbsp Balsamic glaze for drizzling
  • 4-5 Fresh mint leaves for garnish

Method
 

Prepare Ingredients
  1. Wash all fruits thoroughly. Hull and halve or quarter the strawberries, peel and cube the cantaloupe, and peel, slice, and halve the kiwi.
  2. Cut the cheddar and Colby Jack cheeses into uniform 3/4-inch cubes.
Assemble Skewers
  1. Thread the fruit and cheese cubes onto the skewers, alternating colors and textures for a visually appealing presentation. Aim for 3-4 pieces of fruit and 2-3 pieces of cheese per skewer, depending on the skewer length.
  2. A good sequence might be: grape, cheese, strawberry, cheese, cantaloupe, cheese, blueberry, kiwi.
Serve
  1. Arrange the assembled skewers on a serving platter. If desired, lightly drizzle with balsamic glaze and garnish with fresh mint leaves just before serving.
  2. Serve immediately or chill for up to 30 minutes before serving for optimal freshness.

Notes

Feel free to customize with your favorite fruits and cheeses! Other great options include mozzarella balls (bocconcini), watermelon, pineapple, blackberries, or pear slices. For an extra touch, you can drizzle with honey instead of balsamic glaze.
