Ingredients
  

Dip Base
  • 8 oz Cream cheese Can substitute with Greek yogurt for a lighter option.
  • 1 cup Sour cream Can also use Greek yogurt.
  • 1/4 cup Mayonnaise Light mayonnaise can be used.
  • 2 tbsp Lime juice Freshly squeezed preferred; bottled can work in a pinch.
  • 1 tsp Chili powder Cayenne pepper or paprika can be used for a different kick.
Main Ingredients
  • 2 cups Corn Fresh, frozen, or canned corn can be used.
  • 1/2 cup Cotija cheese Can substitute with feta cheese.
  • 1/4 cup Fresh cilantro Optional; add for flavor.

Method
 

Preparation
  1. If using fresh corn, roast or grill it until lightly charred. Let it cool, then slice the kernels off the cob.
  2. In a medium bowl, combine the cream cheese, sour cream, and mayonnaise. Blend until smooth and creamy.
  3. Sprinkle in the lime juice and chili powder. Mix well to incorporate all the flavors.
  4. Gently fold in the corn and cotija cheese, mixing until everything is evenly distributed.
  5. Top your dip with extra cotija cheese, a sprinkle of chili powder, and fresh cilantro for that vibrant pop of color.
  6. Serve with your favorite chips, veggies, or other accompaniments.

Notes

For a spicier dip, add diced jalapeƱos. Letting the dip sit in the fridge for 30 minutes before serving enhances the flavor.
