  • 1/2 cup Vegetable oil or butter Keeps the cake moist; can also use coconut oil.

Preparation
  1. Preheat your oven to 350°F (180°C) and grease a 9x9-inch baking dish, or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for added texture if desired.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Whisk them together until well mixed.
  4. In another bowl, beat together the sugar, eggs, and vanilla extract. Then, add the mashed bananas and vegetable oil (or melted butter) and mix until just combined.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just incorporated to avoid overmixing.
  6. Transfer the batter into your prepared baking dish, spreading it evenly.
Baking
  1. Place it in the oven and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cooling
  1. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, let the cake cool completely. You can enhance it with frosting, whipped cream, or fruit.
