Prepare Oven and Baking Sheet
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Blend the Batter
- Combine the cottage cheese and large egg in a blender or food processor. Blend until completely smooth and no lumps remain, about 1-2 minutes. The mixture should be a smooth, pourable batter.
- If using, add the optional garlic powder, dried Italian herbs, salt, and black pepper to the blender. Pulse a few times to incorporate the seasonings.
Form and Bake
- Pour the batter onto the prepared baking sheet, forming four separate circles (or any desired shape) about 3-4 inches in diameter and 1/4 inch thick. Leave some space between each piece as they will spread slightly.
- Bake in the preheated oven for 18-22 minutes, or until the bread rounds are golden brown, firm to the touch, and cooked through. They should easily peel off the parchment paper.
Cool and Serve
- Remove from the oven and let the cottage cheese bread cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. The bread will firm up as it cools.
- Serve warm or at room temperature. Enjoy as a base for sandwiches, with a spread, or as a high-protein side.
Notes
For an air fryer: Preheat air fryer to 325°F (160°C). Pour batter onto small parchment-lined squares (if needed, cook in batches). Air fry for 10-15 minutes, or until golden and firm.
Get creative with seasonings! Try everything bagel seasoning, onion powder, or a pinch of red pepper flakes for a spicy kick.
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a toaster, oven, or air fryer.
