  • 3/4 cup Unsweetened cocoa powder Dutch-process cocoa will yield a milder taste.
  • 2 teaspoons Baking powder Helps the muffins rise and become fluffy.
  • 1 teaspoon Baking soda Works with the baking powder.
  • 1/2 teaspoon Salt Enhances all the flavors.

  • 2 large Eggs Binds everything together and adds moisture.
  • 1 cup Milk You can use any milk, including non-dairy options.
  • 1/2 cup Vegetable oil For moist muffins; melted butter can also be used.
  • 1 teaspoon Vanilla extract Adds a nice aroma and flavor.
Chocolate Chunks

Method

Preparation
  1. Preheat your oven to 375°F (190°C) to ensure even baking.
  2. Grease a muffin tin or line it with muffin liners to prevent sticking.
  3. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  4. In another bowl, whisk together the sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix!
  6. Fold in the chocolate chunks until evenly distributed.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
