Decadent Chocolate Mousse

Ingredients
  

Chocolate Base
  • 200 g dark chocolate 70% cocoa, finely chopped
  • 2 tbsp butter unsalted
Mousse Mixture
  • 3 large eggs separated
  • 2 tbsp sugar
  • 1 cup heavy cream cold

Method
 

  1. Melt the dark chocolate and butter over a double boiler. Let it cool slightly.
  2. In a separate bowl, whisk egg yolks with sugar until pale and creamy.
  3. Gently fold the melted chocolate into the egg yolk mixture.
  4. In another bowl, whip the egg whites until soft peaks form.
  5. In a separate bowl, whip the heavy cream until soft peaks form.
  6. Gently fold the whipped egg whites and whipped cream into the chocolate mixture.
  7. Divide into serving dishes and chill for at least 2 hours before serving.

Notes

For extra flavor, add a pinch of sea salt or a splash of coffee extract.
