Ingredients
  

Cucumber Avocado Bites
  • 1 large cucumber sliced into rounds
  • 1 avocado mashed
  • 1 tsp lemon juice freshly squeezed
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 1 tsp chopped chives for garnish

Method
 

  1. Slice the cucumber into 1/4-inch thick rounds.
  2. In a small bowl, mash the avocado with lemon juice, salt, and black pepper.
  3. Spoon a small amount of the avocado mixture onto each cucumber slice.
  4. Garnish with chopped chives and serve immediately.

Notes

For extra flavor, add a sprinkle of red pepper flakes or a drizzle of balsamic glaze.
