Crockpot Lasagna Soup

Ingredients
  

Soup Base
  • 1 lb ground beef or Italian sausage browned and drained
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups chicken or beef broth
  • 1 can crushed tomatoes 28 oz
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
Pasta & Toppings
  • 8 oz lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • fresh basil for garnish

Method
 

  1. In a skillet, brown the ground beef or sausage with onion and garlic. Drain excess fat.
  2. Transfer meat mixture to crockpot. Add broth, crushed tomatoes, Italian seasoning, and red pepper flakes.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. About 30 minutes before serving, stir in the broken lasagna noodles. Cook until tender.
  5. Serve hot, topped with ricotta, mozzarella, parmesan, and fresh basil.

Notes

Make it lighter by using ground turkey and low-fat cheese, or add spinach for extra greens.
