Ingredients
  

For the Chili-Choc Crispy Chicken
  • 2 lbs Boneless, Skinless Chicken Breasts about 2 large or 4 small, pounded to 1/2-inch thickness
  • 1 cup Buttermilk
  • 1 cup All-Purpose Flour
  • 1 cup Panko Breadcrumbs
  • 2 Large Eggs beaten
  • 1 tsp Smoked Paprika
  • 1/2 tsp Chili Powder
  • 1/4 tsp Unsweetened Cocoa Powder (optional, for subtle depth)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper freshly ground
  • 2 tbsp Olive Oil Spray or neutral cooking spray
For the Quick Caesar Dressing
  • 1/2 cup Mayonnaise full-fat recommended
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 clove Garlic minced
  • 1/4 cup Parmesan Cheese finely grated, plus more for garnish
  • 1/4 tsp Black Pepper freshly ground, or to taste
  • Pinch Salt to taste
For Assembling the Sandwich
  • 4 Ciabatta Rolls or other hearty sandwich buns, split horizontally
  • 4 cups Romaine Lettuce chopped or torn

Method
 

Prepare the Chicken
  1. Pound the chicken breasts to an even 1/2-inch thickness. If using large breasts, cut each in half horizontally to create 4 thinner cutlets. Place chicken in a bowl and cover with buttermilk. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
  2. Set up a breading station: In the first shallow bowl, combine flour, smoked paprika, chili powder, cocoa powder (if using), garlic powder, onion powder, 1 tsp salt, and 1/2 tsp black pepper. Whisk to combine. In the second shallow bowl, beat the eggs. In the third shallow bowl, add the panko breadcrumbs.
  3. Remove one chicken piece from buttermilk, allowing excess to drip off. Dredge in the seasoned flour, ensuring it's fully coated. Shake off excess. Dip into the beaten egg, then press firmly into the panko breadcrumbs until completely covered. Place on a wire rack. Repeat with remaining chicken.
Make the Quick Caesar Dressing
  1. While the chicken marinates or rests, prepare the Caesar dressing. In a small bowl (or food processor), combine mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, grated Parmesan cheese, 1/4 tsp black pepper, and a pinch of salt. Whisk or pulse until smooth and well combined. Taste and adjust seasoning if needed.
Cook the Chicken
  1. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil spray.
  2. Place the breaded chicken pieces in a single layer in the air fryer basket, ensuring not to overcrowd (cook in batches if necessary). Lightly spray the tops of the chicken with olive oil spray.
  3. Air fry for 10-12 minutes, flipping halfway through, until the chicken is golden brown, crispy, and cooked through (internal temperature reaches 165°F / 74°C).
Assemble the Sandwiches
  1. While the chicken cooks, lightly toast the ciabatta rolls. You can do this in a toaster, oven, or a dry skillet until golden and warmed through.
  2. Spread a generous amount of Caesar dressing on both halves of each toasted ciabatta roll.
  3. On the bottom half of each roll, layer a handful of chopped romaine lettuce. Top with a crispy chicken cutlet.
  4. Add a little more Caesar dressing over the chicken and lettuce, then sprinkle with extra Parmesan shavings if desired. Place the top half of the ciabatta roll to complete the sandwich.
