  • 1 lb Chicken breast or thighs Tender cuts of chicken that soak up flavor, can substitute with turkey or tofu.
  • 2 tbsp Olive oil Feel free to use any cooking oil you prefer.
  • 1 medium Onion Adds sweetness; shallots could be an alternative.
  • 3 cloves Garlic Fresh is best; can use minced or garlic powder if needed.
  • 28 oz Crushed tomatoes The star of the dish; can substitute with diced or fresh tomatoes.
  • 1 cup Heavy cream Substitute with half-and-half or coconut milk for a lighter option.
  • to taste Salt and pepper Essential seasonings.
  • 1/4 cup Fresh basil or parsley Optional for garnish; dried herbs can be used as a substitute.

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and sear for about 5-6 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add a bit more olive oil if needed. Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the crushed tomatoes to the skillet, stirring well to combine. Let this simmer for about 5 minutes to thicken slightly.
  5. Lower the heat and stir in the heavy cream, then return the chicken to the pan. Simmer everything together for another 5-7 minutes, or until the chicken is cooked through and the sauce is creamy.
  6. Adjust seasoning with salt and pepper to taste. If using, sprinkle with fresh basil or parsley before serving.

Notes

Don’t overcook the chicken after adding the cream to keep it juicy. For added spice, consider adding red pepper flakes or some veggies like spinach or bell peppers when making the sauce. Serve with rice or pasta to soak up the sauce.
