Ingredients
  

  • 1/2 cup creamy peanut butter unsweetened preferred
  • 3 tbsp low-sodium soy sauce or tamari for gluten-free
  • 2 tbsp rice vinegar unseasoned
  • 1 tbsp maple syrup or honey/agave nectar
  • 1 tbsp fresh lime juice about 1/2 a lime
  • 1 tsp toasted sesame oil
  • 1 clove garlic minced or grated
  • 1/2 tsp fresh ginger grated
  • 1 tsp chili garlic sauce or sriracha, adjust to taste for heat
  • 3-5 tbsp warm water as needed to thin

Method
 

  1. In a medium mixing bowl, combine the creamy peanut butter, low-sodium soy sauce, rice vinegar, maple syrup, fresh lime juice, toasted sesame oil, minced garlic, grated fresh ginger, and chili garlic sauce.
  2. Whisk all ingredients together vigorously until the sauce is completely smooth and well combined. Ensure there are no lumps of peanut butter.
  3. Gradually add the warm water, 1 tablespoon at a time, whisking continuously until the sauce reaches your desired consistency. For a thicker dipping sauce, use less water; for a thinner dressing or soup base, use more.
  4. Taste the peanut sauce and adjust seasonings as needed. You might want to add more lime juice for tang, maple syrup for sweetness, soy sauce for saltiness, or chili garlic sauce for extra heat.

Notes

This creamy peanut sauce can be stored in an airtight container in the refrigerator for up to 5-7 days. If it thickens upon chilling, simply add a splash of warm water and whisk to restore its desired consistency before serving. It's fantastic with chicken satay, drizzled over noodle bowls, as a dressing for Asian-inspired salads, or as a base for a quick peanut noodle soup.
