  • 1 can butter beans, drained and rinsed Use canned butter beans for a quick preparation.
  • 2 tablespoons butter For a richer flavor.
  • 3 cloves garlic, minced Fresh garlic gives the best flavor.
  • 2 cups fresh spinach Adjust the amount based on preference.
  • Salt and pepper, to taste
  • Parmesan cheese, grated (optional) Can be omitted for a dairy-free version.

Method
 

Cooking
  1. In a skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the butter beans and cook for 5 minutes, stirring occasionally.
  4. Add the spinach and cook until wilted, about 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese if desired.

Notes

This dish can be served as a side with grilled chicken or fish, or as a light vegetarian main course. For storage, let cool and transfer to an airtight container; refrigerate for up to 3 days. Reheat in a skillet over medium heat.
