Ingredients
  

  • 2 medium Ripe Bananas peeled, sliced into 1-inch pieces, and frozen solid (at least 4 hours)
  • 1/2 cup Greek Yogurt plain, full-fat or low-fat
  • 2 tbsp Maple Syrup or honey, adjust to taste
  • 1/2 tsp Vanilla Extract
Optional Mix-ins
  • 2 tbsp Mini Chocolate Chips
  • 2 tbsp Shredded Coconut unsweetened

Method
 

Prepare the Baking Sheet
  1. Line a large baking sheet with parchment paper. This will prevent the bites from sticking once frozen.
Blend the Base
  1. In a food processor, combine the frozen banana slices, Greek yogurt, maple syrup (or honey), and vanilla extract. Process until the mixture is completely smooth and creamy, scraping down the sides as needed. This may take 2-4 minutes, depending on your processor. The consistency should be thick, like soft-serve ice cream.
Add Optional Mix-ins (if desired)
  1. If using mini chocolate chips or shredded coconut, gently fold them into the creamy banana yogurt mixture with a spoon.
Form the Bites
  1. Using a small spoon or a cookie scoop (about 1-inch in diameter), drop rounded spoonfuls of the mixture onto the prepared parchment-lined baking sheet. Leave a small space between each bite.
Freeze Until Solid
  1. Place the baking sheet in the freezer for at least 1-2 hours, or until the bites are completely firm and frozen solid. This is crucial for them to hold their shape.
Store for Later
  1. Once frozen, transfer the creamy banana yogurt bites to a freezer-safe airtight container or a resealable freezer bag. They can be stored in the freezer for up to 2-3 weeks.

Notes

For best results, ensure your bananas are thoroughly frozen before blending. You can also experiment with other flavors like a tablespoon of peanut butter for a 'PB & Banana' bite, or a teaspoon of cocoa powder for a chocolate version. These bites are best enjoyed straight from the freezer!
