Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the cottage cheese, eggs, and vanilla extract to the mashed bananas. Stir until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Don’t overmix!
- If desired, fold in chocolate chips, nuts, or any other mix-ins at this stage.
- Transfer the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Use overripe bananas for maximum sweetness and mix gently to avoid dense bread. Experiment with spices and toppings for extra flavor.
