For the Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest from 1/2 lemon
  • 1 tbsp fresh lemon juice optional, for tang
For the Fruit Topping
  • 1 cup strawberries sliced
  • 1/2 cup blueberries
  • 2 kiwi peeled and sliced
  • 1 (11 oz) can mandarin oranges drained, or 2 fresh mandarins, segmented
  • 1/2 cup green grapes halved
  • 1/2 cup raspberries
  • 1/4 cup clear fruit glaze optional, for shine

Method
 

Prepare the Cookie Crust

  2. In a large mixing bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy (about 2-3 minutes).
  3. Beat in the large egg and vanilla extract until they are well combined into the butter mixture.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed with the electric mixer until just combined and a soft cookie dough forms. Be careful not to overmix.
  5. Press the cookie dough evenly onto the prepared pizza pan, forming a circle. Bake for 12-15 minutes, or until the edges are lightly golden and the center appears set. Avoid overbaking, as the crust will continue to firm up as it cools. Remove from the oven and let cool completely on the pan on a wire rack before proceeding.
Prepare the Cream Cheese Frosting
  1. While the crust cools, prepare the frosting. In a large bowl, beat the softened cream cheese and softened unsalted butter with an electric mixer until the mixture is smooth and creamy, which should take about 2-3 minutes.
  2. Gradually add the powdered sugar to the cream cheese mixture, beating until it is fully incorporated and the frosting is smooth. Stir in the vanilla extract, lemon zest, and the optional fresh lemon juice.
  3. Increase the mixer speed to medium-high and beat for another 1-2 minutes until the frosting becomes light and fluffy.
Assemble the Colorful Fruit Pizza
  1. Once the cookie crust is completely cooled, spread the cream cheese frosting evenly over the crust. You can leave a small border around the edge for a classic pizza look, or spread it to the very edge.
  2. Artistically arrange the sliced strawberries, blueberries, kiwi slices, drained mandarin oranges, halved green grapes, and raspberries over the cream cheese frosting. Feel free to create patterns or simply spread the colors vibrantly!
  3. If using, gently brush or drizzle the clear fruit glaze over the arranged fruit. This adds a beautiful shine and helps to keep the fruit fresh longer.
  4. Chill the Colorful Fruit Pizza in the refrigerator for at least 30 minutes before slicing and serving. This allows the frosting to set up nicely.
