  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup creamy peanut butter
  • 1 large egg room temperature
  • 1 cup milk room temperature (any kind)
  • 1/4 cup vegetable oil (or melted unsalted butter)
  • 1 tsp vanilla extract

Method
 

Prepare for Baking
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper leaving an overhang on the sides.
Combine Dry Ingredients
  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined. Set aside.
Combine Wet Ingredients
  1. In a separate medium mixing bowl, whisk together the creamy peanut butter, large egg, milk, vegetable oil (or melted butter), and vanilla extract until smooth and fully incorporated.
Combine Wet and Dry
  1. Pour the wet ingredients into the dry ingredients. Using a rubber spatula, mix just until combined. Be careful not to overmix; a few lumps are fine. Overmixing can lead to a tough bread.
Bake the Bread
  1. Pour the batter evenly into the prepared loaf pan. If desired, sprinkle the chopped peanuts over the top for extra crunch and presentation.
  2. Bake in the preheated oven for 45-50 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. The top should be golden brown.
Cool and Serve
  1. Remove the loaf pan from the oven and let it cool in the pan on a wire rack for 10-15 minutes. This allows the bread to set and prevents it from sticking.
  2. Carefully remove the bread from the pan and transfer it directly to the wire rack to cool completely before slicing and serving. This ensures a moist crumb and prevents sogginess.

Notes

For an Air Fryer: If your air fryer is large enough to fit a small loaf pan (typically 6x3 or 7x4 inches), you can bake a smaller version of this bread. Reduce the temperature to 300°F (150°C) and bake for approximately 30-40 minutes, checking for doneness with a toothpick. Cooking times will vary significantly based on your air fryer model and pan size. Always ensure the bread is cooked through.
