Prepare the Chicken
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken and cook for 5-7 minutes, stirring occasionally, until no longer pink. Drain any excess liquid.
- Stir in 1/2 cup BBQ sauce, garlic powder, and onion powder. Cook for another 2-3 minutes, ensuring the chicken is thoroughly coated and heated through. Remove from heat.
Assemble the Pizza
- Preheat your oven to 425°F (220°C). Lightly flour a baking sheet or pizza peel. If using a baking sheet, you may line it with parchment paper for easier cleanup.
- Carefully stretch or roll out the pizza dough into a 12-14 inch round or rectangle on your prepared surface.
- Spread 1/4 cup BBQ sauce evenly over the pizza dough, leaving a small border for the crust.
- Evenly sprinkle the mozzarella cheese, followed by the smoked Gouda cheese, over the BBQ sauce base.
- Distribute the cooked BBQ chicken pieces and thinly sliced red onion over the cheese.
Bake the Pizza
- Transfer the pizza to the preheated oven. Bake for 12-18 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
- Once baked, carefully remove the pizza from the oven and let it cool for 2-3 minutes before slicing.
- Garnish with fresh chopped cilantro and an optional drizzle of extra BBQ sauce just before serving.
Notes
For an extra crispy crust, preheat a pizza stone in your oven for at least 30 minutes before baking. You can also use leftover cooked chicken, simply toss it with BBQ sauce and heat through before assembling the pizza.
