Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet, mixing until just incorporated. Be careful not to overmix!
  6. Gently mix in your chocolate chips until evenly distributed.
  7. Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges are golden but the centers look slightly underbaked.
  2. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an even chewier texture, chill the dough for 30 minutes before baking. Store cookies in an airtight container to maintain freshness.
