For the filling
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/2 cup mayonnaise Adjust based on preference.
  • 1 tablespoon Dijon mustard Adjust based on preference.
  • to taste Salt and pepper
For assembly
  • 4 spinach tortillas Can substitute with regular or flavored wraps.
  • Lettuce leaves For wrapping.

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, dried cranberries, sliced almonds, mayonnaise, Dijon mustard, salt, and pepper. Mix until well combined.
  2. Spread the chicken mixture evenly on each spinach tortilla.
  3. Place a few lettuce leaves on top of the chicken mixture.
  4. Roll the tortilla tightly, then slice into pinwheels.
  5. Serve immediately or refrigerate until ready to serve.

Notes

Best served fresh; can be garnished with extra cranberries or sliced almonds. Pair with a light salad or fresh fruit.
