- In a large bowl, combine the shredded chicken, dried cranberries, sliced almonds, mayonnaise, Dijon mustard, salt, and pepper. Mix until well combined.
- Spread the chicken mixture evenly on each spinach tortilla.
- Place a few lettuce leaves on top of the chicken mixture.
- Roll the tortilla tightly, then slice into pinwheels.
- Serve immediately or refrigerate until ready to serve.
Notes
Best served fresh; can be garnished with extra cranberries or sliced almonds. Pair with a light salad or fresh fruit.
