Crust and Topping
  • 1 1/2 cups All-purpose flour Can substitute with whole wheat flour for a nuttier flavor.
  • 1 tsp Baking powder Essential for a light, fluffy texture.
  • 1/4 tsp Salt Enhances flavor.
  • 1/2 cup Unsalted butter Use coconut oil for a dairy-free option.
  • 1 large Egg A flax egg can be used for a vegan option.
  • 1/4 cup Milk Almond or oat milk can be used as substitutes.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the cherries with a bit of sugar. If using frozen cherries, let them thaw and drain any excess juices.
Crust and Topping
  1. In another bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the egg and milk until just combined. Save a portion of this mixture for the topping.
Assembly
  1. Grease a baking dish and press the larger portion of the mixture into the bottom.
  2. Evenly spread the cherry filling over the crust.
  3. Crumble the reserved mixture over the cherries, covering them as much as possible.
Baking
  1. Bake for about 30–35 minutes, or until the topping is golden brown and the filling is bubbly.
Cooling
  1. Let the bars cool for at least 15 minutes before slicing.

Notes

Serve warm or at room temperature. Pair with vanilla ice cream or whipped cream for an indulgent dessert. For gluten-free, substitute all-purpose flour with a gluten-free blend.
