Preparation
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or greasing it.
- Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- Combine the Wet Ingredients: In another bowl, whisk the eggs, then add milk and vegetable oil, mixing until smooth.
- Combine Everything: Pour the wet ingredients into the dry ingredients, gently stir until just combined (a few lumps are okay!).
- Add the Goodies: Gently fold in the cherries and chocolate chips until evenly distributed.
- Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake: Bake in the preheated oven for about 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Enjoy: Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Pro Tips: Don’t overmix to maintain fluffiness. If using fresh cherries, pit and chop them. Let muffins cool slightly for gooey chocolate chips. For flavor, add lemon or orange zest.
