Ingredients
  

For the Chicken
  • 4 each boneless, skinless chicken breasts about 6-8 oz each, pounded to even 1-inch thickness
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning store-bought or homemade
  • 1 tbsp lime juice freshly squeezed
For the Fajita Veggies
  • 1 each red bell pepper sliced into strips
  • 1 each green bell pepper sliced into strips
  • 1 each yellow bell pepper sliced into strips
  • 1 large onion sliced into strips
  • 1 tbsp olive oil
  • 1 tbsp fajita seasoning store-bought or homemade
For the Topping
  • 1.5 cups shredded Monterey Jack cheese or Mexican blend
Optional Garnishes
  • Fresh cilantro chopped
  • Lime wedges
  • Salsa
  • Sour cream or Greek yogurt
  • Avocado or guacamole diced or mashed

Method
 

Prep the Oven & Chicken
  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
  2. Pat the chicken breasts dry with paper towels. In a large bowl, toss the chicken with 2 tablespoons olive oil, 2 tablespoons fajita seasoning, and 1 tablespoon lime juice until evenly coated.
Prepare the Veggies
  1. In the same bowl (no need to clean), add the sliced bell peppers and onion. Drizzle with 1 tablespoon olive oil and sprinkle with 1 tablespoon fajita seasoning. Toss to combine.
Assemble & Bake
  1. Arrange the seasoned chicken breasts in a single layer in the prepared baking dish. Scatter the seasoned bell peppers and onions around and on top of the chicken.
  2. Bake for 15-20 minutes, or until the chicken is mostly cooked through (internal temperature reaches about 160°F / 71°C). Cooking time will vary based on chicken thickness.
  3. Remove the dish from the oven. Sprinkle the shredded Monterey Jack cheese evenly over the chicken and vegetables.
  4. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted, bubbly, and lightly golden, and the chicken has reached an internal temperature of 165°F (74°C).
Serve
  1. Let the dish rest for 5 minutes before serving. Garnish with fresh cilantro, lime wedges, and serve with salsa, sour cream, or avocado if desired.

Notes

For extra flavor, you can marinate the chicken for up to 30 minutes at room temperature or 2 hours in the refrigerator. This dish is excellent served with rice, warm tortillas, or a simple green salad.
