Cheeseburger Soup

Large pot or skillet

- 1 pound Ground Beef Use lean or regular, your choice!
- 1 medium Onion Finely chopped
- 2 medium Carrots Finely chopped
- 2 stalks Celery Finely chopped
- 4 cups Beef Broth Chicken broth works too!
- 1 cup Cheddar Cheese Shredded, sharp or mild, your preference.
- 1 teaspoon Salt Adjust to taste
- 1 teaspoon Pepper Adjust to taste
- 1 teaspoon Garlic Powder Adjust to taste
- 1 teaspoon Onion Powder Adjust to taste
Brown the ground beef in a large pot. Drain off any extra grease.
Add the chopped onions, carrots, and celery. Cook for a few minutes until the vegetables are softened.
Pour in the beef broth. Add salt, pepper, garlic powder, and onion powder. Stir well. Bring the mixture to a boil, then reduce the heat to low and simmer for at least 20 minutes.
Stir in the shredded cheddar cheese during the last few minutes of cooking. Don't let it boil after adding the cheese, or it might become stringy.
