- Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain excess grease.
- Add the garlic, diced tomatoes, corn, baked beans, chili powder, and paprika. Stir well and simmer for 5 minutes.
- Transfer the beef mixture to the prepared baking dish and sprinkle shredded cheddar cheese evenly over the top.
- In a mixing bowl, whisk together the flour, baking powder, and salt. Add the milk and melted butter and mix until a thick batter forms.
- Spoon the biscuit batter over the casserole filling.
- Bake for 30–35 minutes until the topping is golden brown and cooked through.
- Let the casserole rest for 5 minutes before serving.
Notes
You can add diced green chilies or jalapeños for extra spice. This casserole also works well with ground turkey instead of beef.
