Ingredients
  

Beef Filling
  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes drained
  • 1 cup corn kernels fresh or frozen
  • 1 cup baked beans
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 cup cheddar cheese shredded
Biscuit Topping
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter melted

Method
 

  1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain excess grease.
  3. Add the garlic, diced tomatoes, corn, baked beans, chili powder, and paprika. Stir well and simmer for 5 minutes.
  4. Transfer the beef mixture to the prepared baking dish and sprinkle shredded cheddar cheese evenly over the top.
  5. In a mixing bowl, whisk together the flour, baking powder, and salt. Add the milk and melted butter and mix until a thick batter forms.
  6. Spoon the biscuit batter over the casserole filling.
  7. Bake for 30–35 minutes until the topping is golden brown and cooked through.
  8. Let the casserole rest for 5 minutes before serving.

Notes

You can add diced green chilies or jalapeños for extra spice. This casserole also works well with ground turkey instead of beef.
