Prepare the Shortbread Crust
- Preheat your oven to 375°F (190°C). Lightly grease a 9 or 10-inch round pizza pan.
- In a large mixing bowl, combine 1 1/2 cups flour, 1/2 cup granulated sugar, and 1/4 tsp salt. Mix well.
- Add the cold, cubed butter to the dry ingredients. Using a pastry blender, two knives, or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.
- Press the dough evenly into the bottom and slightly up the sides of the prepared pizza pan. Bake for 10-12 minutes, or until lightly golden. Remove from oven and set aside.
Prepare the Apple Filling
- While the crust is baking, prepare the apple filling. In a medium bowl, combine the thinly sliced apples, 1/4 cup brown sugar, 1 tbsp flour, 1 tsp cinnamon, 1/4 tsp nutmeg, and 1 tbsp lemon juice. Toss gently until the apples are evenly coated.
Prepare the Crumble Topping
- In a separate small bowl, combine 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup rolled oats, and 1/2 tsp cinnamon. Mix well.
- Add the cold, small pieces of butter to the dry crumble mixture. Use a pastry blender or your fingertips to cut in the butter until the mixture resembles coarse crumbs.
Assemble and Bake
- Spread the apple filling evenly over the pre-baked shortbread crust.
- Sprinkle the crumble topping evenly over the apples.
- Bake for 25-30 minutes, or until the apples are tender and the crumble topping is golden brown and crispy. If the topping browns too quickly, you can lightly tent it with aluminum foil.
- Remove the apple pizza from the oven and let it cool on a wire rack for at least 15-20 minutes before slicing. This allows the filling to set.
Serve
- Before serving, drizzle generously with caramel sauce, if desired. Serve warm or at room temperature, perhaps with a scoop of vanilla ice cream.
Notes
For best results, use firm apples that hold their shape well during baking. Leftovers can be stored covered at room temperature for up to 2 days, or refrigerated for up to 4 days. Reheat gently in the oven or microwave if desired.
