Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, chopped pecans, and salt.
  5. Gradually add the dry mixture to the butter mixture, stirring until just combined.
  6. Scoop out small portions of dough and roll them into balls (about 1 inch in diameter), and place them on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack. Roll in powdered sugar while still warm.
  9. Let cookies cool completely before enjoying or storing.

Notes

Chill the dough for about 30 minutes if it feels too soft. You can switch nuts or add other ingredients like chocolate chips. For a finer crumb, process the pecans before adding.
