Ingredients
  

Chocolate Cookie Base
  • 1/2 cup unsalted butter softened
  • 1/2 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
Peanut Butter Filling
  • 3/4 cup creamy peanut butter
  • 1/2 cup powdered sugar
Chocolate Ganache
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar. Add the egg and vanilla extract, and mix until combined.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Gradually add dry ingredients to the wet mixture.
  4. Scoop dough into 1-inch balls and place on the prepared baking sheet. Flatten slightly.
  5. Bake for 10 minutes. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
  6. Mix peanut butter and powdered sugar until smooth. Roll into small balls and press onto cooled cookies.
  7. Melt chocolate chips in a microwave-safe bowl in 30-second intervals. Spoon or drizzle over peanut butter layer. Chill for 30 minutes before serving.
