  • 1 cup Unsweetened Cocoa Powder Adds deep chocolate flavor. Dutch-process cocoa can be used for a different taste.
  • 1 cup All-Purpose Flour Provides structure. Can be substituted with gluten-free flour.
  • 1 cup Granulated Sugar Sweetens the cookies. Brown sugar can be used for added moisture.
  • 1/2 cup Brown Sugar Enhances chewiness and adds rich taste.
  • 2 large Eggs Binds the mixture; applesauce or flaxseed mix can be used as substitutes.
  • 1 tsp Vanilla Extract Adds aroma and flavor; pure vanilla is preferable.
  • 1/2 cup Butter, melted Provides richness; coconut oil can be used as an alternative.
  • 1/4 tsp Salt Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until well blended.
  3. Add in the eggs and vanilla extract, mixing until fully incorporated and smooth.
  4. In a separate bowl, sift together the cocoa powder, flour, and salt to remove lumps.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. If desired, fold in chocolate chips or nuts.
  7. Drop tablespoon-sized rounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft.
  2. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overbake to keep cookies fudgy. Chill dough for thicker cookies. Can double the recipe for gatherings.
