  • 1/3 cup honey or maple syrup Maple syrup for vegan option.

  • 2 cups old-fashioned oats Can substitute with instant oats.
  • 1 teaspoon baking powder Helps bars rise.
  • 1 teaspoon cinnamon Optional for flavor.
  • 1/4 teaspoon salt Balances sweetness.
Mix-ins
  • 1 cup chocolate chips Semi-sweet or dark; can substitute raisins or nuts.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. Mash the bananas in a large mixing bowl until smooth, using a fork or potato masher.
  3. Add honey (or maple syrup) and vanilla extract to the mashed bananas and stir until well combined.
  4. Add oats, baking powder, cinnamon, and salt to the bowl, and stir until everything is well mixed.
  5. Fold in the chocolate chips, reserving a small handful for topping.
Baking
  1. Spread the mixture into the prepared baking pan, smoothing the top and pressing it down evenly.
  2. Sprinkle reserved chocolate chips on top.
  3. Bake for 25-30 minutes, or until edges are golden brown and a toothpick comes out clean.
  4. Allow to cool in the pan for about 10 minutes before lifting out using the parchment paper.
  5. Let cool completely on a wire rack before slicing into bars.

Notes

Store in an airtight container in the fridge for up to one week. Bars freeze well for up to three months. Reheat in the microwave for 15-20 seconds for best texture.
