Ingredients
  

For the Baked Feta
  • 8 oz block feta cheese preferably Greek feta
  • 2 pints cherry tomatoes
  • 1/2 cup extra virgin olive oil
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
For the Pasta
  • 12 oz pasta penne or rigatoni
  • 1/4 cup fresh basil chopped
  • 2 tbsp fresh oregano or 1 tsp dried

Method
 

Prepare the Oven
  1. Preheat your oven to 400°F (200°C).
Prepare the Baking Dish
  1. Place the block of feta cheese in the center of a 9x13 inch baking dish.
  2. Arrange the cherry tomatoes around the feta cheese, filling the rest of the baking dish.
  3. Drizzle the olive oil over the feta and tomatoes, ensuring everything is well coated.
  4. Sprinkle the minced garlic, red pepper flakes, salt, and black pepper evenly over the tomatoes and feta.
Bake the Feta and Tomatoes
  1. Bake for 30-35 minutes, until the cherry tomatoes are bursting and the feta is golden and soft.
Cook the Pasta
  1. While the feta is baking, bring a large pot of salted water to boil and cook the pasta according to package directions until al dente.
  2. Reserve 1 cup of pasta cooking water before draining.
Combine and Serve
  1. Remove the baking dish from the oven and immediately mash the feta and tomatoes together with a fork until creamy and well combined.
  2. Add the cooked pasta to the baking dish and toss with the feta-tomato mixture.
  3. Add pasta water as needed to achieve desired consistency - the sauce should coat the pasta nicely.
  4. Stir in fresh basil and oregano, then serve immediately while hot.

Notes

For best results, use high-quality block feta cheese rather than crumbled. The dish can be customized with additional vegetables like zucchini or bell peppers. Leftovers keep in the refrigerator for up to 3 days and can be reheated with a splash of water or broth.
