Prepare the Oven
- Preheat your oven to 400°F (200°C).
Prepare the Baking Dish
- Place the block of feta cheese in the center of a 9x13 inch baking dish.
- Arrange the cherry tomatoes around the feta cheese, filling the rest of the baking dish.
- Drizzle the olive oil over the feta and tomatoes, ensuring everything is well coated.
- Sprinkle the minced garlic, red pepper flakes, salt, and black pepper evenly over the tomatoes and feta.
Bake the Feta and Tomatoes
- Bake for 30-35 minutes, until the cherry tomatoes are bursting and the feta is golden and soft.
Cook the Pasta
- While the feta is baking, bring a large pot of salted water to boil and cook the pasta according to package directions until al dente.
- Reserve 1 cup of pasta cooking water before draining.
Combine and Serve
- Remove the baking dish from the oven and immediately mash the feta and tomatoes together with a fork until creamy and well combined.
- Add the cooked pasta to the baking dish and toss with the feta-tomato mixture.
- Add pasta water as needed to achieve desired consistency - the sauce should coat the pasta nicely.
- Stir in fresh basil and oregano, then serve immediately while hot.
Notes
For best results, use high-quality block feta cheese rather than crumbled. The dish can be customized with additional vegetables like zucchini or bell peppers. Leftovers keep in the refrigerator for up to 3 days and can be reheated with a splash of water or broth.
