Baked Cranberry Brie Bites

Ingredients
  

  • 2 sheets Puff Pastry frozen, thawed according to package directions
  • 8 oz Brie Cheese wheel, rind removed and cut into 24 small cubes
  • 1/2 cup Whole Berry Cranberry Sauce canned or homemade
  • 1/4 cup Pecans finely chopped
  • 1 tbsp Maple Syrup optional, for drizzling
  • 1/2 tsp Fresh Rosemary finely chopped, optional garnish

Method
 

Prepare Oven and Muffin Tin Overview
  1. Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin or line with paper liners.
Prepare Puff Pastry Overview
  1. Unroll one sheet of thawed puff pastry onto a lightly floured surface. Using a sharp knife or pizza cutter, cut the pastry into 12 equal squares (approximately 2.5-3 inches each). Repeat with the second sheet of puff pastry.
  2. Gently press each pastry square into the prepared mini muffin cups, allowing the corners to stand up slightly.
Assemble the Bites Overview
  1. Place one cube of brie cheese into the center of each puff pastry cup.
  2. Spoon about 1 teaspoon of cranberry sauce over the brie in each cup.
  3. Sprinkle the chopped pecans over the cranberry sauce in each bite.
Bake and Serve Overview
  1. Bake for 15-18 minutes, or until the puff pastry is golden brown and puffed, and the brie cheese is melted and bubbly.
  2. Carefully remove the muffin tin from the oven. Let the bites cool in the tin for 5 minutes before gently removing them to a wire rack.
  3. If desired, drizzle lightly with maple syrup and sprinkle with fresh chopped rosemary just before serving.

Notes

These bites are best served warm. If making ahead, you can reheat them in a 300°F (150°C) oven for about 5-7 minutes until warmed through and pastry is crisp again. For a touch of zest, add a tiny pinch of orange zest to the cranberry sauce before filling the cups.
