Ingredients
  

For the Salad
  • 2 large Avocados ripe, diced
  • 1 pint Cherry Tomatoes about 2 cups, halved
  • 8 oz Fresh Mozzarella bocconcini or ciliegine, drained, halved or quartered
  • 1/2 cup Fresh Basil packed, roughly torn or chiffonade
For the Dressing
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Balsamic Glaze store-bought or homemade
  • 1/2 tsp Sea Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste

Method
 

Prepare Ingredients Group
  1. Carefully dice the ripe avocados. Halve the cherry tomatoes. If using bocconcini or ciliegine mozzarella, drain them and halve or quarter them depending on size.
  2. Roughly tear or chiffonade the fresh basil leaves. Set all prepared ingredients aside.
Assemble Salad Group
  1. In a large mixing bowl, gently combine the diced avocado, halved cherry tomatoes, fresh mozzarella pieces, and torn basil leaves.
Dress and Serve Group
  1. Drizzle the extra virgin olive oil evenly over the salad ingredients. Then, drizzle the balsamic glaze over the salad.
  2. Season with sea salt and freshly ground black pepper to taste. Gently toss the salad to combine all ingredients without mashing the avocado.
  3. Transfer the Avocado Caprese Salad to a serving platter and serve immediately.

Notes

For an enhanced experience, serve this salad with slices of toasted crusty bread or focaccia. Ensure your avocados are ripe but still firm enough to hold their shape when diced. If preparing ahead, add avocado and dressing just before serving to prevent browning.
