  • 2 slices rustic bread sourdough, ciabatta, or thick-cut whole wheat
  • 1 large ripe avocado
  • 1 tbsp fresh lime juice
  • 1/4 tsp salt or to taste
  • Pinch black pepper
  • 1/4 cup cherry tomatoes halved
  • 1 tbsp red onion very thinly sliced
  • 1/4 cup shredded mozzarella cheese
  • 1 tbsp fresh basil leaves chopped or torn
  • 1 tsp olive oil for drizzling on bread
  • 1 tbsp balsamic glaze for drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, mash the ripe avocado with the fresh lime juice, salt, and black pepper using a fork until it's chunky-smooth. Set aside.
Assemble and Bake
  1. Place the bread slices on the prepared baking sheet. Drizzle each slice lightly with olive oil. Toast in the preheated oven for 3-4 minutes, just until they are lightly golden and slightly crisp.
  2. Remove the bread from the oven. Spread the mashed avocado evenly over each toasted bread slice, going almost to the edges.
  3. Arrange the halved cherry tomatoes and thinly sliced red onion on top of the avocado layer.
  4. Sprinkle the shredded mozzarella cheese generously over the toppings.
  5. Return the avocado bread pizzas to the oven and bake for another 4-5 minutes, or until the cheese is melted and bubbly and the edges of the bread are golden brown.
Serve
  1. Carefully remove from the oven. Garnish immediately with fresh basil leaves and a drizzle of balsamic glaze. Serve hot and enjoy your Avocado Bread Pizza!
