Apple Waffles with Homemade Cinnamon Spice Mix

Ingredients
  

For the Homemade Cinnamon Spice Mix
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/4 tsp Ground Ginger
  • 1/8 tsp Ground Cloves
For the Waffles
  • 2 cups All-purpose flour
  • 2 tbsp Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 3/4 cups Milk whole or 2%
  • 2 Large eggs
  • 1/4 cup Unsalted butter melted and cooled slightly
  • 1 tsp Vanilla extract
  • 1 medium Apple e.g., Gala, Fuji, or Honeycrisp, peeled, cored, and finely diced
  • 2 tbsp Vegetable oil or non-stick cooking spray, for waffle iron

Method
 

Prepare the Homemade Cinnamon Spice Mix
  1. In a small bowl, combine the ground cinnamon, nutmeg, ginger, and cloves. Whisk together until well blended. Set aside.
Prepare the Waffle Batter
  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and 1.5 teaspoons of the homemade cinnamon spice mix (save the rest for topping or future use).
  2. In a separate medium bowl, whisk together the milk, eggs, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. Be careful not to overmix; a few lumps are fine. Gently fold in the finely diced apple.
Cook the Waffles
  1. Preheat your waffle iron according to the manufacturer's instructions. Lightly brush or spray the waffle iron plates with vegetable oil or non-stick cooking spray.
  2. Pour approximately 1/2 to 3/4 cup of batter (or the amount recommended by your waffle iron manufacturer) onto the hot waffle iron. Close the lid and cook for 3-5 minutes, or until the waffle is golden brown and crisp, and steam is no longer escaping.
  3. Carefully remove the cooked waffle and transfer it to a plate. Repeat with the remaining batter, ensuring to re-grease the waffle iron between each waffle if needed.
  4. Serve the apple waffles immediately with your favorite toppings such as maple syrup, a sprinkle of the remaining homemade cinnamon spice mix, whipped cream, or extra diced apples.

Notes

For extra flavor, you can toss the diced apples with a tablespoon of brown sugar and a pinch of the homemade cinnamon spice mix before folding them into the batter. Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a toaster or oven for crispiness.
