Ingredients
  

Muffins
  • 1/2 cup pumpkin puree
  • 1 egg large
  • 1/4 cup vegetable oil
  • 1/3 cup brown sugar packed
  • 1/2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup apple peeled and diced
Streusel Topping
  • 2 tbsp unsalted butter softened
  • 2 tbsp brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp apple finely chopped

Method
 

  1. Preheat oven to 350°F (175°C) and line or grease a muffin tin.
  2. In a bowl, whisk together pumpkin puree, egg, oil, brown sugar, and vanilla.
  3. In another bowl, mix flour, baking soda, salt, and pumpkin pie spice.
  4. Combine wet and dry ingredients, then fold in the diced apple.
  5. Divide the batter evenly among 6 muffin cups.
  6. To make the streusel, mash together butter, brown sugar, and flour, then stir in finely chopped apple. Sprinkle over muffin batter.
  7. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly before serving.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days. Great for fall brunches or cozy mornings!
